Datar Goda Masala is a typical traditional spice mix used in the western parts of Maharashtra, India, especially in the Ratnagiri and Raigad districts for preparing vegetables, sprouts (usal) and dal curry

Aloo Baingan Sabzi (Maharashtrian Style)

INGREDIENTS :

Datar Goda Masala: 5 tablespoons
Baingan Cubes: 400 grams
Potato Cubes: 150 grams
Chopped Onion: 2 (125 grams)
Tomato Paste: 150 grams
Vegetable Oil: 5 tablespoons (25 ml)
Hot Water: 2 cups (250 ml)
Chopped Coriander Leaves: 10 grams
Datar Salt: as per taste

METHOD OF PREPARATION :

  • Heat oil in a pan. Add the chopped onions and fry till they turn golden brown
  • Add the chopped potato cubes and fry for 3 minutes. Add the baingan cubes and tomato paste and fry for another 2 minutes.
  • Add Datar Goda Masala and fry for 1 minute. Add hot water and Datar Salt to taste.
  • Cover the pan for 5 minutes on a low flame till the vegetablesare cooked.
  • Sprinkle chopped coriander.
  • Serve the hot Datar Aloo Baingan sabzi with chapati or phulka.
