Eggplants made tastier with Datar’s Stuffed Baingan Spice Mix.

INGREDIENTS :

Datar Stuffed Baingan (Eggplant) Spice Mix: 4 tablespoons,
Eggplant: 400 grams
Roasted peanuts powder: 4 tablespoons (150 grams)
Fresh grated coconut: 2 cups (200 grams)
Chopped coriander leaves: 10 grams
Vegetable oil: 5 tablespoons (25 ml)
Hot water: 2 cups (450 ml)
Datar Salt: as per taste

METHOD OF PREPARATION :

  • In a bowl, take Datar Stuffed Baingan Spice Mix. Add fresh grated coconut, roasted peanut powder and mix well.
  • Cut the baingan in halves and fill the mixture. Keep aside.
  • Heat oil in a pan and put the stuffed baingan one by one and slowly fry on low flame for 3 minutes. Apply the lid and let it simmer for 5 minutes on low flame.
  • Add hot water and Datar salt carefully and close the lid. Cook on a low flame for 5 minutes.
  • Garnish with chopped coriander leaves.
  • Serve the Datar Stuffed Baingan with chapatti or phulka.
