Recreate the classic egg curry by adding a little zing of our Datar Egg Curry Spice Mix.

INGREDIENTS :

Datar Egg Curry Spice Mix: 3 tablespoons (20 grams)
Eggs: 6
Tomatoes: 200 grams
Chopped Onions: 2 (120 grams)
Cooking Oil: 8 tablespoons (40 ml)
Datar Salt: as per taste
Grated Fresh Coconut: 600 grams
OR
Coconut Milk Powder: 10 tablespoons (70 grams)

METHOD OF PREPARATION :

  • Boil the eggs and remove the shells.
  • Make four slits on the sides of the eggs.
  • Add 2 tablespoons of oil to a pan and fry the eggs for 1 minute. Keep aside.
  • Boil 800 ml of water. Remove it from the gas and add 600 grams of grated coconut.
  • Keep it aside for 15 minutes. Pass it through a sieve and squeeze the coconut to extract the coconut milk. Keep it aside.
  • Fry the chopped onions on a medium flame till they are golden brown. Add the chopped tomatoes and fry for 2 to 3 minutes.
  • Add 3 tablespoons of Datar Egg Curry Spice Mix. Fry for 5 seconds and add the coconut milk and Datar Salt as per taste.
  • Cook for 5 minutes on a low flame. Add the fried eggs and cook for 1-2 minutes.
  • Serve the Datar Egg Curry with chapati / tandoori roti.
