Take 500 grams of basmati rice and soak in water for one hour. Drain the waterand add one litre of freshwater and Datar Salt as per taste.Cook the rice till it is about ¾th done (75%). Drain the excess water and keep it aside.To 4 tablespoons of milk, add saffron and boil for 2 minutes. Mix it well with the rice.Take some water in a vessel and add potato cubes, french beans, carrots, green peas and cauliflower and cook the vegetables. Keep it aside.Heat ghee in a pan and add chopped onions, ginger paste, garlic paste, green chilies, cashew nuts and fry till the onions turn golden brown.Add Datar Vegetable Biryani Spice Mix and fry for a few seconds.Add cooked vegetables, pudina and Datar Salt as per taste. Cook on a low flame for 5 minutes.Take another vessel; add a layer of rice followed by a layer of vegetables alternately and cover the vessel with the lid.Place the vessel on the pan and cook it on low flame until rice is cooked.Serve hot Datar Biryani Pulao with raita.
