What You’ll Need

For the Gravy
  • Datar Goda Masala: 5 tablespoonsBaingan Cubes: 400 gramsPotato Cubes: 150 gramsChopped Onion: 2 (125 grams)Tomato Paste: 150 gramsVegetable Oil: 5 tablespoons (25 ml)Hot Water: 2 cups (250 ml)Chopped Coriander Leaves: 10 gramsDatar Salt: as per taste

Cooking Steps

  • Heat oil in a pan. Add the chopped onions and fry till they turn golden brownAdd the chopped potato cubes and fry for 3 minutes. Add the baingan cubes and tomato paste and fry for another 2 minutes.Add Datar Goda Masala and fry for 1 minute. Add hot water and Datar Salt to taste.Cover the pan for 5 minutes on a low flame till the vegetablesare cooked.Sprinkle chopped coriander.Serve the hot Datar Aloo Baingan sabzi with chapati or phulka.
