Take a bowl and soak Datar Quinoa in water for 5 minutes. Rinse thoroughly in running water for 3 – 4 times and drain.
Take Datar Quinoa in a vessel, add water and salt to taste (if required) and keep it on medium flame to boil. After 5 – 6 minutes once water boils reduce the flame, cover the vessel and once it is properly cooked and water is absorbed, put off the flame (Total cooking time is 15 to 20 minutes).

Datar Quinoa Flour : 2 Cups

Edible Oil / Ghee : 1 tsp
Datar Salt : To taste
In a bowl take Datar Quinoa flour, salt, oil & mix it well. Add 1 cup hot water, mix it with a spatula, cover it and keep it aside for 5 minutes. While mixture is still warm use your hand to knead the dough, add oil to make the dough smooth. (Make sure the dough is not sticky). Divide the dough in to small lemon size balls.
Flatten each ball gently, sprinkle little Datar Quinoa , roll out the balls and roast it on both sides on tawa or pan.

Datar Quinoa Pasta : 2 cups
Onion : 1 medium, finely chopped
Tomato : 1 medium, finely chopped
Carrot : 1 small, peeled and cut into small pieces
Green Peas : ¼ cup
Ginger Garlic Paste : 1 tablespoon
Pasta Masala Powder :1 teaspoon
Oil : 1 ½ tablespoon
Salt to taste
Fresh coriander leaves for garnishing
Boil 2 – 3 cups of water in a pan, add Datar salt, oil and Datar Quinoa Pasta and keep stirring till the pasta is cooked. Drain out the water and keep pasta aside.
Heat oil in a pan, add chopped onion and sauté till it turns golden brown, add ginger and garlic paste, sauté for few minutes. Add chopped tomato and sauté till it becomes soft; add salt, pasta masala powder and sauté for 1 minute, add carrot and green peas, stir it until cooked, add pasta, stir it evenly and cook further for 2 minutes.
Garnish with coriander leaves, serve hot.
